Insanity Day 15: Fit Test 2/Lentil Soup Recipe

I’m feeling a little shaky after today’s fit test, probably because I haven’t had enough water or eaten anything.  I’ll be fixing that in a minute.  Here are my results after two weeks.  Overall I’m pretty happy with them:

Lentil soup (all ingredients organic):

3 or 4 carrots, sliced, 1 large or 2 small onions, chopped, 2 or 3 stalks celery, sliced, 3 cups rinsed lentils, 2 cans organic no-salt added diced tomatoes, 3-4 quarts low-sodium vegetable stock, chicken stock, or water (depends on how thick you want it), cumin to taste,coriander to taste (you could also use curry seasoning) cayenne to taste, salt and pepper to taste (my hubby is watching his salt intake so I didn’t add salt), 4 bay leaves.

Sautee veggies in a little olive oil spray till onions start to caramelize.  Add liquid, tomatoes, and seasonings, bring to a boil, add lentils, turn heat down, cook until lentils are cooked through.  Adjust seasonings as needed.  You could serve this with naan.  Each cup of soup is about 125 calories if you use stock as your liquid, 100 without, and it’s a good source of iron, protein and fiber.

 

Insanity Day 13/Pure Cardio and Cardio Abs

I haven’t blogged for a few days.  I haven’t really had the time, but I’ll catch things up a bit….the weekend was BUSY.  Workout, housework, yardwork, working the kids and the dog out Saturday.  More housework Sunday, then workout and more housework Sunday night.  Eleven hours later, the morning of 4/26 another workout.  My legs were jello all day yesterday, and still a little when I woke up today, plus I’m feeling kind of coldish to begin with.

So, it’s Pure Cardio AND Cardio Abs tonight, since I rescheduled from this morning. At least I can rest tomorrow, if I don’t die tonight. ;)

 

Insanity Day 8/Cardio Power and Resistance

Wow.  I really have to find away to get some deep sleep, and enough of it.  I was wide awake at 2.  Then again at 5:30.  At that point, I thought, “I should just stay up because my workout buddy will be here at 7.”  I texted her and asked if we could make it 8, since we didn’t have to be a the kids’ rehearsal as early as I thought.  And I went back to sleep.  I woke up right at 8, and two seconds later, the doorbell rang.  Not only did I not sleep well and hit the ground running, haha, but I also have PMS.  Deep down I am a happy person, but today, the world was a dark and gloomy place.

Then I did today’s workout.  I was able to do things today that I wasn’t the last time we did this session.  Like the triceps ball push-up, where you’re on the tips of your toes, curled up in a ball, hands on the floor in front of you, and you attempt to do push-ups in this position.  I did them!  Then there were the push-ups where your feet are running while you’re in the plank position.  I did those too!  So I couldn’t do everything yet, but there is definite improvement, even where there is little sleep.  Keep digging deeper!

 

Insanity Days 6 and 7/Leek and Potato Soup

Day 6 is a repeat of Plyo Cardio Circuit.  I woke up with too little sleep and not enough water, again, which affected my workout.  I was dragging again.  I was also feeling discouraged by the scale.  Not that there’s a lot to lose, 10-15 lbs or so, but I feel it and want it GONE! Still, I did it, not to the best of my ability, but I did it.  I like this one because you use all of the muscle groups in one session.  What am I saying?  ALL the sessions are like that.  The exercises change, though, so you work the muscles in different ways.  That brings me up to today, which is Day 7.  Rest day.  A REAL rest day.  And a day that I’m starting to see real results.  Two pounds lighter than when I started a week ago.  Enough said.  See you tomorrow for day 8, Cardio Power and Resistance.  Time to pack on the protein.

Here’s the recipe for what we had for lunch:

5 lbs potatoes, sliced (peels on or off, your choice)

2 or 3 leeks, sliced and rinsed well (they grow in sandy soil so they’re really dirty)

4 tbsp olive oil (or butter)

4 tbsp flour (I use unbleached)

2 quarts low-sodium organic stock (chicken or vegetable)

2-3 cups milk (if you’re avoiding dairy, use cashews ground in a blender or VitaMix with water, garlic, dill, lemon, salt and pepper to a paste to add creaminess and protein.  I use the cashew mixture for a veggie dip as well.)

salt and pepper to taste

Heat olive oil, add leeks and sautee, then add flour, sautee till flour is cooked, 2-3 min.  Add stock and potatoes, bring to a boil till potatoes are tender (about 20-30 minutes), then add milk or cashew paste to desired creaminess.

Made it for lunch for 6 people, no leftovers.  Good sign. :)

 

Insanity Day 5/Pure Cardio

Pure torture!  Not really.  Although I couldn’t keep up with some of the exercises, I kept moving without having to stop, other than when he says to take a water break.  It is intense, non-stop cardio, with exercises the likes of which I have never seen.  I couldn’t understand the weight gain, but was thankful to be able to even be able to exercise.

A little background, I was diagnosed with Chronic Fatigue Syndrome 2 1/2 years ago, one of the main symptoms being that exercise causes you to be completely wiped out and feel worse for the next few days, where it’s energizing for most.  After walking down the block and back, I would be immobilized for at least three, in most cases five days, where every time I got up it felt like I would collapse.  They said if it resolves, it would be within 2-4 years.  So, I am thankful to make it through an Insanity workout and actually feel better afterwards.  HUGE victory!  Changing eating habits and eating cleaner has helped also.

If you’re reading this and doing Insanity or any form of exercise, if I can do it, so can you.  Keep going, don’t give up!

 

Insanity Day 4/ Cardio Recovery

Recovery.  Sweet Recovery.  Well, recovery according to Shaun T., which really means yoga and stability exercises.  But it was nice to not have to jump around.  My legs were more sore the next day than from the first workout with all the “control, not cardio”, in the words of Shaun T.  Right.  Then why is my heart pounding?  Anyway, I get the idea, it’s to allow your heart to not have to pound quite so hard to prepare for Pure Cardio.  Yikes.

 

Insanity Day 3

So I didn’t work out on Friday, what SHOULD have been day 3.  I felt like I had a cold coming on, so thought rest would help everyone better than killing myself.  The next day (yesterday) I woke up feeling refreshed after having gotten good sleep and making sure I was hydrated. Robert took the kids out to breakfast and my friend Anne came over.  The timing worked out well since it was just the two of us.  While I like the kids exercising with us, this particular workout would have resulted in at least a couple of injured kids.  We needed room for this one.

It was Cardio Power and Resistance.  Lots of squat jump exercises that employ the core.  Different variations of push-up exercises and tricep dips.  I couldn’t keep up with the people in the video (THEY couldn’t keep up with Shaun T.), BUT I was able to keep moving without stopping, until water breaks.  Rest+enough water= more stamina.

Now that I’ve started exercising, I’m noticing that my cravings are much more intense.  Not good, but I guess that’s normal if I’m using more energy.  I gained half a pound yesterday, despite us also going out shopping a walking around a lot.  I noticed yesterday that I wasn’t wiped out after being out with my family for six hours.  I haven’t been able to say that for a long time, since I was diagnosed with chronic fatigue syndrome in 2007. Robert did say from his experience that the first few days he gained as a result from increased hunger, but that as his body adjusted things became more balanced.  I hope that’s the case with me as well.  I’m keeping track of my intake: calories, fat, sodium, fiber, sugar and protein.  It shows me where I’m doing well and where I need to watch more carefully, and helps me stay at a calorie count that will allow me to lose.

Tonight, Anne will be coming over to do Cardio Recovery with me.  The word “recovery” in Insanity language means only a little sweat is dripping instead of a lot, because you’re not jumping around.  At least we get a break. ;)

 

Insanity Day 2/Vietnamese Salad Recipe

Today was a challenge.  I was having a hard time waking up, but my husband was diligent and I was up.  I checked my phone, and thankfully saw that my friend Anne was on her way.  Oh, good, accountability, which I need right now with everything else our family has going on.  She got here, I got my water and we, with the kids, began plyometric cardio circuit.  Not at the Shaun T. and kids’ pace, but at the haven’t-done-nearly-enough-yet-to-be-in-that-kind-of-shape pace.  Then I stopped.  And began again.  And felt nauseous and sat down.  And began again.  Towards the end, I got a bit of a second wind even though my legs felt like jello, and we completed it.

My legs are in pain, and I know it will spread to the rest of my body by tomorrow morning.  Will that stop me from doing day 3?  No.  If I can push through the next couple of days and allow my body to condition itself, the pain will subside.  Then I can push harder till I get sore again. :)

Two things I was reminded of today:

1. If you’re working out first thing in the morning, make sure you drink a lot of water the night before. I started dehydrated today, which I think contributed to my unsusual exercise fatigue and muscle soreness before the workout was done

2. The benefits of exercise so outweigh the difficulty of beginning a program.  I’m only on day 2, and although I’m sore, my energy level seems to have improved already.  Keep going!

As far as my diet, it wasn’t the greatest today, mainly because we were out of the house for six hours.  The content wasn’t bad, but I don’t think I ate enough today.  Tonight I hope to make up for it with the salad I created.  My husband and I were also trying to think of ways for him to add more calories and protein without adding sugar and sodium, and not get bored with the same stuff all the time, hopefully this will help.  For family of four or so, the amounts should do it.  Our amounts were much larger, as we have seven, but it feels like at least ten….

2 c lettuce (I used romaine)

1 c cashews

2 c grilled meat (I used boneless skinless chicken breast)

1/2 c mint, rough chopped

1/2 c fresh basil, rough chopped

1 cucumber, peeled and julienned

1 c bean sprouts

rice noodles (either leave them soft or fry them,we left them soft to reduce the fat), you could also use chow mein noodles

For time’s sake today, I grabbed a bottle of Spicy Peanut Vinaigrette from Trader Joe’s, but I’ve also made this Asian dressing with success:

peanut oil, ginger, red pepper flakes, diced onions and a bit of sugar (now I use agave nectar because it’s low-glycemic), all to taste and drizzle over salad.

 

Shaun T., you really ARE insane….Insanity Day 1:Fit Test

Insanity 60-day workout is not for the faint of heart.  It’s an intense, max-interval training program designed to push you to your limits and beyond throughout the workout.  The warnings in it are not just for show.  That said, this workout program produces incredible results if you stick with it.  My husband Robert started four weeks ago.  He’s lost 20 pounds and muscles are becoming more defined.  He’s also eating right, which has added to the effect.  It can be done!

OK, so today was the Fit Test, in which you do a series of exercises and record your results after each one.  It’s a baseline to see where you are when you start the program, then you do it every two weeks to check your progress.

Tomorrow will be Plyometric Cardio Circuit, but here are my results for the Fit Test:

A Hollywood Bash

I’m in awe.  I keep going over my daughter’s party in my mind, thinking of how well it went, but more, the quality of character in the company she keeps and being slapped in the face with the reality that they’re not little anymore.  First, my older two girls kids got all dolled up Old Hollywood/red carpet style, with make-up and heels.  That was enough to make my jaw drop.  The youngest three chose characters instead- Annah was Annie, Alaynah was Hannah Montana and Aaron was Buzz Lightyear.  Then their friends began to arrive.  One by one, they came through the front door as if stepping from childhood to young adulthood, especially since some of them are now taller than I am without heels.  These girls are all beautiful inside and out to begin with.  Having that accentuated with formal clothes, hair and make-up done, and heels was enough to nearly bring me to tears.  I was surrounded not by little girls, but by amazing young women. Snapshots of young childhood memories with most of the girls started pouring into my mind, bringing me to the sudden reality of where, and who, they are now.

These girls are godly, talented, strong yet feminine, highly intelligent, diligent, patient, helpful, thoughtful, and funny.  They don’t swear.  They’re not boy-crazy.  They’re not selfish, they have servant’s hearts.  They’re not clique-ish, and they go out of their way to make new people or those they don’t know well feel comfortable.  I firmly believe that the qualities I see are a direct result of prayer and the investment that the parents have made into their children’s hearts.  I love seeing seeds bear fruit!

Earlier that day, I had to run around gathering up last-minute things, which took longer than I thought it would.  I’m so thankful that Rebekah, my sister Katie and Robert were here to work on the house, decorating, etc, and then after I got home, helping to prepare the food.  The decorations were found at Party America, in the Oscars night section, discovered by my sister.  We bought signs that said “Lights, Camera, Action, Hollywood, Awards Night, Party with the Stars” and in the place where they were giving their speeches “And the winner is…..”.  The colors were red, black and gold and we added a few balloons to accentuate the signs.  Our living room is painted tan with one accent wall in red, so the colors Sarah chose appealed to my OCD matchi-ness.  Anyway, I couldn’t have done it without their help.

The party began with the girls eating from an array of appetizers and salads while they mingled.  Shortly after that, we began the videos.  Oh.  My.  Goodness.  First of all, I was impressed by how much they all participated.  Next, the uniqueness of each video was so much fun! One video was of two girls on a trampoline, tied together at the ankle, with balls on it, “Dodgeball Trampoline”.  Their trying to get OFF the trampoline while still tied together was really what made it.  There was one video, “The Unusual Pills”, created by one of the girls, where it shows her looking for a headache pill (candy), and after several times, showing her “growing and shrinking”, using her younger sister and a friend as the alternate of herself.  Another one, “The Stupid Version of Robin Hood”, had a couple of the girls dramatizing an edited, more modern and funny version of Robin Hood, complete with costumes and music.  Rebekah had chosen a couple of videos, in which it shows our kids pushing each other out of the way to get camera time, and one of Adriannah’s 2nd birthday when we were making cake or something and Annah was smeared with chocolate, Sarah was licking the bottom of a large bowl so you couldn’t see her head and Rebekah was making faces at herself in the camera (she could see the screen). There were also videos of Sarah’s friends when they were younger, which were hilarious and put things into even clearer perspective between then and now, as if I needed it.  I knew these girls were talented but I really began to get a better understanding of just how creative and well-rounded they are.  One girl’s writing a book (several of the girls, including Sarah who has a poetry and script collection, are looking into getting published) and sewed a beautiful costume for one of the other girls based on the one of the characters in the book.

Then, more food. I have to say, I know our family eats a lot, and that the girls are teens, but I was not expecting the quickness with which the amount of food was gone, and I mean GONE.  Thank God I bought extra so I could refill platters.  Then, more talent and creativity.  Many of the girls play piano and sing, so hearing them all take turns playing and singing together was a lovely accompaniment while I worked in the kitchen to put more food out.  They also interacted with our youngest kids, and while this didn’t surprise me as many of them have younger siblings, it blessed me to see the enjoyment, patience and kindness they took in playing with them.

The next thing was hearing the speeches.  MORE creativity, and wit, I might add.  The girls have such a great understanding of humor, and the satire of Hollywood they showed, they should ALL be on stage for real.  Just amazing…..”I’d like to thank the maker of this dress for FINALLY getting it right, I don’t feel squeezed into it like a sausage this time”….”Thanks to George Clooney, oh, and my parents for giving birth to me, and to all the little people, you know who you are”….and tying their speeches into their videos and costumes.  Here’s the birthday girl’s speech…

I thank the Academy for this award,
But the film in itself was its own fine reward!
I thank the director, the cast and the crew
And thanks to the fam’ly—you know I love you.
Thanks to my sisters and one single brother
And thanks to my parents, my father and mother.
I was so happy to work on this show;
I’m glad that it helped my career to grow.
The friends in the audience helped me to shine,

Those who are backstage just have no clue
What it’s like to be famous, but that’s all on you.
So now, with this this trophy, as I walk off the stage
I think you should know that I improve with age.
And that I am so grateful to everybody
But the person who made this all happen was ME.

It’s hard to tell from writing the expression they used while delivering their speeches.  All I can say is they had us rotflol, because their tone, body language and facial expressions were spot on.

Then it was time to vote on best costume, video and speech.  I had made it so everyone would go home with a prize.  The prizes were 1st place in each category, Claire’s gift cards, 2nd place Starbucks, 3rd place Jamba Juice and 4th, cash, in descending amounts. We also had as a “bonus prize” a bowl filled with a mix of candy you’d find at a movie theater, you all know the game, you have to guess how many there are in the bowl and whoever gets the closest without going over gets the prize, which was cash in this case.  So they voted, and while they were doing that and Robert was tallying everything up I got things ready for cake, which was awesome, by the way.  My mom and Sarah made an orange coconut cake the night before and spent the better part of the day of the party decorating it with fondant to look like a film reel.

We sang to Sarah, had cake, and then it was time for the distribution of prizes.  I could swear that these girls have seen a Miss America pageant or two, because their spoof of pageant contestants while they were waiting for their names to be announced, and then when their names were called, was hysterical.  The party was scheduled to end at 9:30, and at this point it was 9:00, which gave us just enough time to open gifts before limos started showing up to take the stars home.

Side note, we’ve done slumber parties in the past and while everyone’s getting along and having a good time at night, the next day is a challenge for both girls and parents who have to deal with kids who haven’t slept enough and have had too much stimulation.  We gave Sarah a choice to invite a large group and have the party end at 9:30 or have just a couple friends to spend the night.  I’m glad she chose the way she did.

Yet again, I was blown away by the talent and creativity.  While there were gift cards for places Sarah likes to shop, and hats (her favorite accessory), which were thoughtful by themselves, many of the girls had handmade gifts thinking of Sarah’s likes, favorite color, etc.  One girl made a turquoise hat by hand, one crocheted and stuffed very cute monkey (Sarah’s favorite animal), one girl made some very cute earrings, which I may have to borrow, in turquoise.  So thoughtful and creative.

I see Sarah and the friends she and Rebekah have and am so thankful that their junior high experience has been so different than mine was, that they and their friends are not caught up in drama and cattiness, that those things aren’t generally in the character of who they are.

I think the girls all had a great time.  Prayerfully memories were made that they’ll be able to take with them for the rest of their lives, I know they were for me.
